Cake Mix Cookies

Sometimes you’ve had one of *those* days.

You know the ones.

You  just need a cookie.

And some cake.

And possibly a Scotch on the rocks with a twist.

The problem is that it is almost always sometimes not advisable to have both cookies AND cake at night.

So I have the solution to your problems.

I bring you:

Cake Mix Cookies –

And the best part is that there are only four ingredients.  One of which is water, and we all know that water BARELY counts as an ingredient.  So technically, there are only three ingredients!  SCORE!

You will need:

1 Box of Cake Mix (any flavor)

1/4 Cup Water

1/4 Cup Oil

1 Egg

Directions:

Preheat oven to 350.

Mix cake mix, water, oil and egg until well blended.

If you have a fancy stand mixer like my Mother-in-law, you can use it.  But a spoon and and some good ‘ole elbow grease will work just as well.

Spoon batter by rounded tablespoonful onto an ungreased cookie sheet (even better if it’s non-stick).

Again, if you have a fancy cookie scooper thingy like my Mother-in-law, you can use it.  If not, a plain ‘ole spoon will work just as well.

The only bonus to the fancy scooper is that your batter comes out looking like little tiny ice cream scoops. It’s adorable, really.

Toss ‘em in the oven and bake them for 15 minutes.

Move them to a wire rack….

And then promptly devour them.

If you want to get fancy, you can add m&m’s or chocolate chips or coconut, or whatever else sounds good, to the batter.  And if you want to get REALLY fancy, you can even frost them.

Your significant other will love them.  Your coworkers will love them.  Your kids will love them.  Your beagle Fred will love them.

You can thank me later.  Now get to baking!

No. I cannot believe it. Cake cookies? The two best things in the ENTIRE world, merged into one? I may die, today. Do they taste like cake? I love cake. I adore cake. Cake makes me weep in gratitude for its mere presence.

I’m going to go weep in the corner now as I make my kids get dressed so we can go buy cake mix. Because I must have them. Today.

One of my best friends made some of these for me last year for Christmas and they were so good. So yummy in fact that I only got 2 cookies and my boyfriend ate all the other ones and then demanded that I make these for him. Thanks for posting this, as I completly forgot about this cookie from heaven.

Used fudge cake mix. They are crazy good. Perfect texture for ice cream sandwiches! Making those once they cool.

Use white cake mix and roll them in cinnamon sugar & voila – snickerdoodles. And because they are all cinnamon-y they can double as breakfast.

I LOVE cake mix cookies, but now you’ve shared the secret!!! And I was so pulling off that “oh, it wasn’t too much trouble to whip up a few dozen for the bake sale/car wash/class party”.

I also have a recipe that makes brownie cookies – comes in handy when brownie mixes are 10/$10!

There is nothing good about this. And by that I mean that there is everything good about this…you know…except my ‘healthy diet.’ Meh, screw the healthy diet.

Can’t wait to try this.

I too came here today purely for this recipe. My cookies are in the oven now. I made sure to test the batter first – you know, just to make sure that it was safe for the rest of the family to eat. Then I prepared two cookie sheets for 24 cookies. The only problem is that I still had about 4 cookies worth of dough left over. Everybody knows that you can’t make a partial sheet of only 4 cookies, so in order to do things correctly I just ate that last bit of dough. Thank you Aiming Low for the easiest cookie recipe ever and the extra 5 lbs that I just gained.

Thank You! Made these today with my toddler (funfetti cookies). Turned out great. I had to keep them in longer than 15 minutes, and the batter made 18 cookies. I used an ice cream scooper to measure, then rolled them into balls. (I have no idea how anyone could’ve gotten over two dozen!?! But then again, I like my cookies round and chewy with a slight crunch on the edges, not flat and hard… so maybe I made them differently?)

Anyways, I have one other cake mix cookie recipe saved that only uses 2 eggs and 1 stick of butter and it’s gotten lots of reviews. I plan on making my next batch that way to compare, but this version will definitely be hard to beat! Thanks again!
