The BEST and EASIEST Crock Pot Chicken

You know when you find a meal that’s super duper easy to make AND clean up AND it tastes amazing, you can’t quite believe it? So you make it again, half expecting it to suck. But somehow, it tastes even better? Yeah, that’s this crock pot meal.

It has five ingredients. I’m not even kidding.

Ingredients:

2-4 Boneless Skinless Chicken Breasts (depending on how many you’re feeding AND, they can even be frozen!)
1 1/2 to 2 Cups of Salsa- Mild, Medium or Hot depending on how spicy you like it
1 Can Black Beans, drained and rinsed
1 Cup Cream Cheese (I use 1/2ish cup if I’m only using 2 chicken breasts and less salsa)

White Rice, cooked according to package directions

Directions:

Place chicken breasts in crock pot. Cover with Salsa and black beans.
Turn Crock Pot on Low and cook for 4 hours. During last half hour, add the cream cheese and let it melt over the top.

I like to smoosh everything around to make sure that the cream cheese is combined into the sauce. It also helps to shred the chicken a bit.

Put the rice on a plate and cover it with the chicken and beans.

and…enjoy!

Adapted from a recipe on food.com that uses corn, which my husband doesn’t like.

I was just gonna say that I’ve done something similar but with corn…then I saw your footnote.

My God that sounds delicious!

I just put it into Weight Watchers recipe builder substituting fat free cream cheese and brown rice. It’s 8 points per serving if you divide the dish by 6 over 1/2 c of brown rice each.

My family has a very similar recipe… Except I ONLY use chicken and salsa! It is soooo good wrapped in a tortilla with a little sour cream. Perfect for those days when we need to run out the door, and I know I won’t have time to cook at night. :-)

Thanks for the recipe!

I have another easy chicken crock pot one you may want to try:
put 4 skinless chicken breasts in the crockpot
mix 1 package of Good Seasons Italian Dressing MIX with 2/3 cup of water and pour over chicken
cook for 3 hours on low (1.5 on high)

soften 8 oz cream cheese and mix with 1 can of cream of chicken soup
pour over chicken in crock pot
cook for 1 hour on low

we serve over rice or noodles. also, this recipe easily doubles.

love crock pots :)
